Sounding like a chef's nightmare, Leftover Salmon, the band that is will be the first to tell you they are far from it. Describing their sound as "polyethnic Cajun slamgrass," the Boulder-born jam band seasons fans with a combination of funk, rock, Latin, bluegrass and Cajun influences. Formed in the early 1990s, Leftover Salmon joined the likes of Phish and the String Cheese Incident in following an American tradition: endless touring = endless jamming.
